So easy to make and so good! I love to make a batch to have on hand for lunch or dinner throughout the week. And I use whatever veggies I have on hand. Serve with some fresh grated Parmesan cheese and warm bread! YUM
VEGETABLE SAUSAGE SOUP
-6 c tomato juice (RW Knudsen’s Organic Very Veggie is my favorite. its super flavorful)
-2 c water
-1/2 head cabbage
-3-4 zucchini
-3-4 stems celery
-1 onion, diced
-1 container sliced fresh mushrooms
-1/2 tsp garlic powder
-5 cubes/tsp boullion
-1 T Italian seasoning
-1 lb. sweet mild italian sausage. { one of the flavors I love the most in the sausage is fennel seeds...so if you can’t get Harmon’s sausage, maybe grab some fennel seeds and throw them in.}
Sauté the sausage with diced onion and then add liquid followed by the rest of ingredients.
